- 2 Puff pastry sheets
- 4 Eggs
- 2 cups Fresh spinach
- 4 oz Cream cheese
- Salt to taste
- Pepper to taste
- 1 tbsp Olive oil
- Parmesan cheese (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry and cut into desired shapes for the shells.
- Place the pastry shells on a baking sheet and bake for about 12-15 minutes until golden and flaky.
- In a skillet, heat olive oil over medium heat, add fresh spinach, and sauté until wilted.
- In a bowl, mix sautéed spinach with cream cheese, salt, and pepper.
- Once the pastry shells are baked, remove them from the oven and carefully crack an egg into each shell.
- Spoon the spinach mixture around the egg.
- Optionally sprinkle with Parmesan cheese.
- Return to the oven and bake for another 10-12 minutes until the eggs are set to your liking.
- Serve warm.
Notes
For a meat version, add cooked bacon or ham. Substitute goat cheese or feta for cream cheese for a different flavor.
