A delightful mix of flaky pastry, soft egg, and creamy spinach that’s perfect for breakfast, brunch, or a light dinner.

Ingredients

  • 2 Puff pastry sheets
  • 4 Eggs
  • 2 cups Fresh spinach
  • 4 oz Cream cheese
  • Salt to taste
  • Pepper to taste
  • 1 tbsp Olive oil
  • Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry and cut into desired shapes for the shells.
  3. Place the pastry shells on a baking sheet and bake for about 12-15 minutes until golden and flaky.
  4. In a skillet, heat olive oil over medium heat, add fresh spinach, and sauté until wilted.
  5. In a bowl, mix sautéed spinach with cream cheese, salt, and pepper.
  6. Once the pastry shells are baked, remove them from the oven and carefully crack an egg into each shell.
  7. Spoon the spinach mixture around the egg.
  8. Optionally sprinkle with Parmesan cheese.
  9. Return to the oven and bake for another 10-12 minutes until the eggs are set to your liking.
  10. Serve warm.

Notes

For a meat version, add cooked bacon or ham. Substitute goat cheese or feta for cream cheese for a different flavor.
