- 1 tbsp olive oil
- 1 lb ground turkey
- 1 medium onion (chopped)
- 2 cloves garlic (minced)
- 1 packet (1 oz) taco seasoning or 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 cup water or chicken broth
- 1 (15 oz) can black beans (rinsed and drained)
- 1 cup frozen corn
- 4 cups cooked rice (brown or white)
- Optional toppings: salsa, avocado slices, sour cream or Greek yogurt, shredded cheese, fresh cilantro (chopped), lime wedges
Instructions
- Cook rice according to package directions.
- In a large skillet, heat olive oil over medium heat.
- Add chopped onion and cook until softened, about 3-5 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Add ground turkey to the skillet, breaking it up with a spoon and cook until browned, about 5-7 minutes.
- Drain any excess grease.
- Stir in taco seasoning (or chili powder, cumin, and paprika) and water/broth.
- Bring to a simmer and cook for 2-3 minutes, allowing flavors to meld.
- Stir in black beans and corn, cooking for another 3-5 minutes until heated through.
- Assemble bowls by placing a serving of cooked rice in each bowl and topping with the ground turkey mixture.
- Add desired toppings such as salsa, avocado, sour cream, cheese, and cilantro.
- Serve with lime wedges.
Notes
Use lean ground turkey to reduce fat. Prepping toppings ahead of time saves time during meal assembly.
