  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • 2 cups fresh strawberries, hulled and sliced

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a bowl, sift together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and sugar until light and fluffy.
  4. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the flour mixture to the butter mixture, alternating with the milk. Start and end with the flour mixture. Mix until just combined.
  6. Gently fold in the sliced strawberries. Pour the batter into the prepared cake pan.
  7. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For a richer flavor, add a teaspoon of almond extract along with the vanilla. Store any leftover cake in an airtight container at room temperature for up to three days.
