- 4 cod fillets (6 oz each)
- 2 tbsp fresh ginger, grated
- 1/4 cup low-sodium soy sauce
- 2 tbsp honey
- 1 tbsp lemon juice
- 2 green onions, chopped (for garnish)
- 1 tbsp toasted sesame seeds (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, whisk together soy sauce, honey, grated ginger, and lemon juice.
- Place cod fillets in a shallow dish and pour half the marinade over them. Marinate for 15-30 minutes.
- Arrange marinated fillets on a greased baking sheet and brush with the remaining marinade. Bake for 12-15 minutes until flaky.
- Optional: Toast sesame seeds in a skillet until golden.
- Serve the cod garnished with green onions and sesame seeds.
Notes
Pair with rice or veggies for a complete meal. Leftovers can be stored for up to two days in the refrigerator.
