  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup vegetable oil
  • 1 cup milk
  • 1 egg
  • 1 cup chopped fresh strawberries
  • 1 cup powdered sugar
  • 2 tablespoons milk (for glaze)
  • 1/2 cup pureed strawberries (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together flour, sugar, baking soda, and salt.
  3. In another bowl, whisk together vegetable oil, milk, and egg.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in chopped strawberries.
  5. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick comes out clean.
  6. While the bread is baking, prepare the glaze by mixing powdered sugar, milk, and pureed strawberries until smooth.
  7. Once the bread is done, let it cool for a few minutes before drizzling the glaze over the top.
