- 1 cup cake flour
- 1 1/2 cups granulated sugar
- 12 egg whites
- 1 teaspoon cream of tartar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup water
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, sift together cake flour and 1/2 cup of the sugar.
- In another bowl, beat egg whites with cream of tartar and salt until soft peaks form.
- Gradually add remaining sugar, continuing to beat until stiff peaks form.
- Fold the flour mixture into the egg whites gently, ensuring not to deflate the batter.
- Stir in vanilla and water until just combined.
- Pour batter into an ungreased cupcake pan.
- Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
- Allow to cool completely before removing from the pan.
Notes
These cupcakes can be served plain or with powdered sugar, fresh berries, or whipped cream. For longer storage, refrigerate them and allow to sit at room temperature before serving.
