Instructions
- Marinate chicken breasts in a mixture of olive oil, lemon juice, minced garlic, salt, and pepper for at least 30 minutes.
- Grill or bake the chicken until cooked through.
- Cook quinoa or rice according to package instructions.
- In a bowl, combine diced cucumber, tomato, and red onion for the salad.
- Assemble the bowls with quinoa or rice, sliced chicken, salad mix, and sprinkle with feta cheese.
- Serve with homemade tzatziki sauce on the side.
