- 2 sea bass fillets
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 tablespoons unsalted butter
- 1 tablespoon fresh herbs (like parsley, dill, or chives), chopped
- 2 medium potatoes, peeled and diced
- 1/4 cup cream or milk
- Microgreens for garnish
- 1 lemon, halved and charred
Instructions
- Preheat the grill to medium-high heat.
- Brush the sea bass fillets with olive oil and season with salt and pepper.
- Grill the sea bass for about 4-5 minutes on each side until cooked through and grill marks appear.
- Meanwhile, boil the diced potatoes in salted water until fork-tender, about 15-20 minutes. Drain and mash them with cream or milk until smooth.
- In a small saucepan, melt the butter over low heat and stir in the chopped herbs.
- Serve the grilled sea bass over a bed of creamy mashed potatoes, drizzled with herb butter, and garnished with microgreens and charred lemon.
