Instructions
- Cook the brown rice according to package instructions.
- In a large skillet, heat olive oil over medium heat.
- Add onions and garlic, sauté until translucent.
- Add ground beef and cook until browned.
- Stir in diced bell pepper and spinach, cooking until vegetables are tender.
- Season with salt, pepper, and soy sauce if desired.
- Serve the beef mixture over cooked rice, and enjoy!

Top with shredded cheese, lime, or green onions. For a low-carb option, use cauliflower rice.
