- 1 cup of almond flour
- 1 cup of cottage cheese
- 1 cup of fresh raspberries
- 2 tablespoons of honey or maple syrup
- 1 teaspoon of vanilla extract
- 1 tablespoon of lemon juice
- 1/4 cup of protein powder
- 1/4 teaspoon of salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the almond flour with a pinch of salt and press it into a lined baking dish to form the crust.
- In another bowl, blend the cottage cheese, honey, vanilla extract, lemon juice, and protein powder until smooth.
- Gently fold in the raspberries.
- Pour the filling over the crust and spread it evenly.
- Bake for 25-30 minutes, or until the center is set.
- Let it cool, then refrigerate for at least 2 hours before slicing into bars.
Notes
Serve with yogurt or extra fresh raspberries. Store in the fridge for a week or freeze for up to three months.
