Ingredients

  • 1 cup of almond flour
  • 1 cup of cottage cheese
  • 1 cup of fresh raspberries
  • 2 tablespoons of honey or maple syrup
  • 1 teaspoon of vanilla extract
  • 1 tablespoon of lemon juice
  • 1/4 cup of protein powder
  • 1/4 teaspoon of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the almond flour with a pinch of salt and press it into a lined baking dish to form the crust.
  3. In another bowl, blend the cottage cheese, honey, vanilla extract, lemon juice, and protein powder until smooth.
  4. Gently fold in the raspberries.
  5. Pour the filling over the crust and spread it evenly.
  6. Bake for 25-30 minutes, or until the center is set.
  7. Let it cool, then refrigerate for at least 2 hours before slicing into bars.

Notes

Serve with yogurt or extra fresh raspberries. Store in the fridge for a week or freeze for up to three months.
