- 1 cup oats
- 1/2 cup mixed nuts (e.g., almonds, walnuts, cashews)
- 1/2 cup seeds (e.g., sunflower seeds, pumpkin seeds)
- 1/2 cup dried fruits (e.g., raisins, cranberries, apricots)
- 1/4 cup natural nut butter (e.g., almond butter, peanut butter)
- 1/4 cup honey or maple syrup
- 1/2 teaspoon cinnamon
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the oats, mixed nuts, seeds, dried fruits, cinnamon, and salt.
- In a separate bowl, mix the nut butter and honey (or maple syrup) until smooth.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- Scoop tablespoon-sized amounts of the mixture onto the prepared baking sheet, pressing down gently.
- Bake for 10-12 minutes or until they are golden brown.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- Store in an airtight container.
Notes
For a chewier cookie, use slightly more nut butter and do not overbake.
