  • 1 cup unsweetened applesauce
  • 1 cup diced apples
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts or raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a cake pan.
  2. In a large bowl, combine rolled oats, baking powder, cinnamon, and salt.
  3. In another bowl, mix together applesauce, honey (or maple syrup), melted coconut oil, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir until well combined. Fold in the diced apples and optional nuts or raisins.
  5. Pour the batter into the prepared cake pan and spread evenly.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
