Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Red food coloring (optional)
  • Sprinkles (optional)

Instructions

  1. In a bowl, whisk together the flour and baking powder.
  2. In another bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. Gradually mix in the dry ingredients until just combined.
  5. If desired, divide the dough in half and mix red food coloring into one half to create a contrasting color.
  6. Shape the dough into logs and roll in plastic wrap.
  7. Chill in the refrigerator for at least 1 hour.
  8. Preheat the oven to 350°F (175°C).
  9. Slice the chilled dough into 1/4-inch thick cookies and arrange on a baking sheet.
  10. If using, sprinkle with sprinkles.
  11. Bake for 10-12 minutes or until the edges are golden.
  12. Allow to cool on a wire rack and enjoy!

Notes

Chill well for clean slicing. Use room temperature butter for better creaming.
