This Honeycrisp Apple and Feta Salad is a crisp, colorful, and deliciously simple fall salad with sweet apples, tangy feta, crunchy nuts, and a honey vinaigrette.

Ingredients

2 Honeycrisp apples, thinly sliced or chopped

5 oz baby arugula or mixed greens

⅓ cup crumbled feta cheese

¼ cup chopped walnuts or pecans (toasted if preferred)

¼ cup dried cranberries (optional)

2 tbsp pumpkin seeds or sunflower seeds (optional)

¼ small red onion, thinly sliced (optional)

3 tbsp olive oil

1 tbsp apple cider vinegar or lemon juice

1 tsp Dijon mustard

1½ tsp honey or maple syrup

Salt and pepper to taste

Instructions

1. In a small bowl, whisk olive oil, vinegar, mustard, honey, salt, and pepper to make the dressing.

2. Add greens to a large bowl. Top with sliced apples.

3. Sprinkle in feta, nuts, cranberries, and optional toppings.

4. Pour the dressing over the salad and toss gently to combine.

5. Serve immediately and enjoy!

Notes

Use lemon juice on apples if prepping in advance to prevent browning.
