A hearty and flavorful Bacon Potato Frittata that’s easy to prepare and perfect for any meal.

Ingredients

  • 8 large eggs
  • 6 strips bacon (chopped)
  • 2 medium potatoes (diced)
  • 1/2 cup heavy cream
  • 1/4 cup fresh chives (chopped)
  • 1/2 cup cheddar cheese (grated)
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F.
  2. Cook bacon in a skillet until crispy.
  3. Remove bacon and set aside.
  4. Add potatoes to the same skillet and cook until golden brown.
  5. Whisk eggs with cream in a bowl and add salt and pepper.
  6. Pour egg mixture over potatoes and sprinkle bacon and cheese on top.
  7. Cook on stovetop for 3 minutes.
  8. Transfer the skillet to the preheated oven and bake for 15-20 minutes until set.
  9. Garnish with fresh chives before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. You can reheat in the microwave or oven.
