Ingredients

  • 4 large potatoes, peeled and cubed
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • Salt to taste
  • Butter for frying

Instructions

  1. Boil the potatoes in salted water until tender, then drain and mash them.
  2. Allow the mashed potatoes to cool slightly, then mix in the flour, baking powder, and salt until a dough forms.
  3. Divide the dough into 2 or 4 portions and shape each into a flat round.
  4. Heat a skillet over medium heat and melt some butter.
  5. Fry the potato rounds for about 5-6 minutes on each side or until golden brown.
  6. Serve warm with eggs, bacon, or a dollop of butter.

Notes

Store any leftover potato farls in an airtight container in the fridge for up to three days. Reheat in a skillet or microwave, or fry lightly again for a crispy texture.
