- 4 large potatoes, diced

- 1 cup green beans, chopped

- 1 cup cooked barley
- 2 tablespoons olive oil
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add the onions and garlic, sautéing until soft.
- Add the potatoes, carrots, parsnips, and green beans, and stir for a few minutes.
- Pour in the vegetable broth and diced tomatoes, and bring to a simmer.
- Stir in the cooked barley, thyme, rosemary, salt, and pepper.
- Cover and let simmer for about 30 minutes, or until the vegetables are tender.
- Adjust seasoning to taste and serve warm.
Notes
Feel free to customize with other vegetables like zucchini or bell peppers. For added protein, consider adding lentils or chickpeas.
