- 1 pound Italian sausage, sliced
- 3 bell peppers (red, yellow, green), sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil
- Cooked pasta or rice (optional for serving)
- Grated Parmesan cheese (for topping, optional)
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the sliced sausage and cook until browned.
- Add the chopped onion and minced garlic, cooking until the onion is translucent.
- Stir in the sliced bell peppers and cook until they begin to soften.
- Pour in the crushed tomatoes and add Italian seasoning, salt, and pepper.
- Bring to a simmer and let cook for about 10-15 minutes.
- Serve over cooked pasta or rice, and top with grated Parmesan cheese if desired.
Notes
This casserole pairs well with a side salad or crusty bread. It can be made in advance and stored in the fridge for up to 24 hours before cooking.
