- 1 cup white sugar

- 1 tsp vanilla extract

- 1 cup crushed pineapple, well-drained
- 1/2 cup icing sugar
- 2 tbsp pineapple juice
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in eggs one at a time, then add vanilla extract.
- Fold in sour cream followed by the dry ingredients, mixing gently.
- Carefully fold in the crushed pineapple.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 30-35 minutes until a toothpick inserted comes out clean.
- While the cake bakes, whisk together icing sugar and pineapple juice for the glaze.
- Allow the cake to cool before glazing and serve.
Notes
For added texture, fold in shredded coconut or chopped pecans with the pineapple. Substitute crushed pineapple with other fruits for a fun twist.
