- 4 cups kale, chopped
- 1/4 cup grated Parmesan cheese
- 1 cup croutons
- 1/4 cup olive oil
- 1 lemon, juiced
- Salt and pepper to taste
Instructions
- In a large bowl, combine the chopped kale, lemon juice, olive oil, salt, and pepper.
- Massage the kale with your hands for a few minutes until it starts to soften.
- Add in the grated Parmesan cheese and toss to combine.
- Top with croutons before serving.
Notes
Store leftovers in an airtight container in the fridge and add croutons just before serving to avoid sogginess.
