- 1 cup rolled oats
- 1/4 cup almond butter
- 1/4 cup maple syrup
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 2 tablespoons poppy seeds
- 1/4 teaspoon salt
- 1/4 teaspoon vanilla extract
Instructions
- In a mixing bowl, combine all the ingredients and stir until well mixed.
- Lay the mixture out on a piece of parchment paper or a non-stick mat.
- Once combined, use your hands to form the mixture into small balls.
- Place the energy bites on a plate and refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the fridge for up to a week.
