Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the butter and sugar together in a mixing bowl until combined.
- Add the egg, vanilla, lemon juice, and lemon zest. Mix well.
- Incorporate the flour, baking powder, salt, and baking soda into the mixture.
- Use a 1 tablespoon cookie scoop to create cookie dough balls and place them 1.5 inches apart on the prepared baking sheet.
- Bake for 7 minutes.
- Remove from the oven and let cool on the baking sheet for 10 minutes before transferring to a cooling rack.
- For the glaze, combine lemon juice with powdered sugar and optional vanilla, mixing until smooth. Adjust consistency if needed.
- Drizzle the glaze over the cookies and let cool completely.
Notes
For added flavor, consider mixing in some poppy seeds or using lime juice for a different twist. You can also add white chocolate chips or dried cranberries for variation.
