Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the butter and sugar together in a mixing bowl until combined.
  3. Add the egg, vanilla, lemon juice, and lemon zest. Mix well.
  4. Incorporate the flour, baking powder, salt, and baking soda into the mixture.
  5. Use a 1 tablespoon cookie scoop to create cookie dough balls and place them 1.5 inches apart on the prepared baking sheet.
  6. Bake for 7 minutes.
  7. Remove from the oven and let cool on the baking sheet for 10 minutes before transferring to a cooling rack.
  8. For the glaze, combine lemon juice with powdered sugar and optional vanilla, mixing until smooth. Adjust consistency if needed.
  9. Drizzle the glaze over the cookies and let cool completely.
