Ingredients

  • 2 medium eggplants
  • 1 cup breadcrumbs
  • 1 cup grated Parmesan cheese
  • 2 teaspoons garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • Olive oil spray

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Slice the eggplants into rounds, about half an inch thick.
  3. In a bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, black pepper, and salt.
  4. Dip each eggplant slice into the breadcrumb mixture, making sure to coat both sides.
  5. Lightly spray the air fryer basket with olive oil.
  6. Place the coated eggplant slices in a single layer in the basket.
  7. Spray the top of the eggplant slices with olive oil.
  8. Air fry for 10 minutes, flipping the slices halfway through, until golden brown.
  9. Remove the eggplant and let it cool for a few minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the air fryer to restore crispiness.
