This low carb chicken casserole is the perfect comfort food without the carbs. Creamy, cheesy, and made in one dish, it’s keto-friendly and ready in under 30 minutes.

Ingredients

3 cups cooked shredded chicken

1 cup full-fat sour cream

1 cup shredded cheddar cheese

½ cup cream cheese

½ tsp garlic powder

½ tsp onion powder

1 tsp Italian seasoning

Salt and pepper to taste

1 tbsp olive oil

1 cup chopped broccoli (optional)

Instructions

1. Preheat oven to 375°F (190°C) and grease a casserole dish.

2. In a bowl, mix sour cream, cream cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper.

3. Add the shredded chicken and broccoli, mixing until evenly coated.

4. Spoon into the dish and top with shredded cheddar.

5. Bake uncovered for 25 minutes or until bubbly and golden.

6. Let rest 5 minutes before serving.

Notes

Use rotisserie chicken for convenience.

Add jalapeños or chili flakes for spice.

Swap sour cream for Greek yogurt if preferred.
