- 1 cup cornmeal
- 1 cup milk
- 1 egg
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup canned corn, drained
- 1/2 cup green onions, chopped
- 1/2 cup bell pepper, chopped
- Oil for frying
Instructions
- In a large bowl, mix the cornmeal, milk, egg, baking powder, and salt until combined.
- Stir in the drained corn, green onions, and bell pepper.
- Heat oil in a skillet over medium heat.
- Drop spoonfuls of the mixture into the hot oil.
- Fry until golden brown on both sides, about 3-4 minutes per side.
- Transfer fritters to a paper towel-lined plate to drain excess oil.
Notes
Serve with ranch or salsa for added flavor. Can customize with cheese or spicy ingredients as desired.
