Ingredients
2 tbsp olive oil
1 lb chicken breasts or thighs, diced
1 onion, chopped
3 cloves garlic, minced
4 cups chicken broth
1/2 cup sun-dried tomatoes, chopped
1 cup heavy cream
1/2 cup Parmesan cheese, grated
2 cups spinach or kale
1 tsp Italian seasoning
Salt and pepper to taste
Instructions
1. Heat olive oil in a pot and sauté onion and garlic until fragrant.
2. Add chicken and sear lightly until golden.
3. Pour in chicken broth and bring to a simmer.
4. Stir in sun-dried tomatoes and Italian seasoning.
5. Add cream and Parmesan, stir until creamy.
6. Finish with spinach, cooking until wilted.
7. Season with salt and pepper, serve hot.
Notes
Swap heavy cream with half-and-half for lighter texture.
Use rotisserie chicken for a faster meal.
Coconut milk and dairy-free Parmesan can make it dairy-free.
