Ingredients

  • 1 lb sirloin steak (about 1-inch thick)
  • 3 tbsp olive oil
  • 2 garlic cloves (minced)
  • 1 tbsp lemon juice (fresh)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup roasted chickpeas (optional for paleo or keto)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ½ red onion (thinly sliced)
  • ½ cup kalamata olives (pitted)
  • ⅓ cup feta cheese (crumbled; optional for dairy-free)
  • ¼ cup fresh herbs (parsley or dill, chopped)

Instructions

  1. Mix the marinade ingredients (3 tbsp olive oil, 2 minced garlic cloves, 1 tbsp lemon juice, 1 tsp dried oregano, 1 tsp dried thyme, ½ tsp salt, and ¼ tsp black pepper). Coat the steak and let it marinate for 30 minutes to 4 hours.
  2. For the tzatziki, mix together 1 cup Greek yogurt, ½ grated cucumber (squeezed dry), 1 tbsp lemon juice, 1 minced garlic clove, 1 tbsp fresh dill, and salt & pepper to taste. Chill in the fridge.
  3. Whisk together the vinaigrette ingredients: 3 tbsp olive oil, 2 tbsp lemon juice, 1 tsp honey (omit for Whole30), 1 minced garlic clove, ½ tsp dried oregano, and salt & pepper to taste.
  4. Heat a skillet over high heat and sear the steak for 4–5 minutes per side for medium rare (cook longer if desired). Let the steak rest for 5–10 minutes, then slice thinly against the grain.
  5. Layer the cooked grains in bowls, add the sliced steak, roasted chickpeas (if using), and the fresh toppings. Spoon tzatziki on top and drizzle with vinaigrette.

Notes

Store components separately for best texture. Refrigerate for up to 3–4 days. Freeze cooked steak or grains for up to 2 months, but do not freeze tzatziki.
