- 1/4 cup raisins

- 1 tablespoon lemon juice
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine lentils, carrots, herbs, nuts, olives, and raisins.
- In a separate bowl, whisk together olive oil, lemon juice, cumin, paprika, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Let it sit for at least 15 minutes to allow the flavors to meld.
- Serve as a main dish for lunch or as a side at dinner.
Notes
Store any leftovers in an airtight container in the refrigerator for up to three days. The flavors improve after sitting in the fridge for a day.
