Ingredients

  • 1 cup cooked lentils
  • 2 carrots, chopped
  • 1/2 cup mixed herbs (parsley, cilantro)
  • 1/4 cup nuts (almonds or walnuts), chopped
  • 1/4 cup olives, sliced
  • 1/4 cup raisins
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine lentils, carrots, herbs, nuts, olives, and raisins.
  2. In a separate bowl, whisk together olive oil, lemon juice, cumin, paprika, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Let it sit for at least 15 minutes to allow the flavors to meld.
  5. Serve as a main dish for lunch or as a side at dinner.

Notes

Store any leftovers in an airtight container in the refrigerator for up to three days. The flavors improve after sitting in the fridge for a day.
