- 1 pound shrimp, peeled and deveined
- 1 pound smoked sausage, sliced
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 garlic cloves, minced
- 2 cups long-grain rice
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- Green onions, chopped (for garnish)
Instructions
- In a large pot, heat some oil over medium heat. Add the sausage and cook until browned, about 5-7 minutes.
- Add the onion, bell pepper, and garlic to the pot, cooking until the vegetables are soft.
- Stir in the rice, allowing it to toast for a minute.
- Add the chicken broth, diced tomatoes, Cajun seasoning, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for 20 minutes.
- Add the shrimp to the pot, cover, and cook for another 5-7 minutes until the shrimp are pink and cooked through.
- Fluff the rice with a fork and garnish with green onions before serving.
Notes
Feel free to swap shrimp for chicken or add more vegetables for extra nutrition. For added heat, include jalapeños or hot sauce.
