- 1 cup unsalted butter, softened

- 2 cups powdered sugar
- 2 tablespoons heavy cream or milk
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 2 minutes. Add the egg and vanilla extract, mixing until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add to the wet mixture, mixing on low speed. The dough will be thick but soft. Add the milk and mix until combined.
- Divide the dough into five portions and use gel food coloring to tint each portion a different pastel color. Knead the coloring into the dough until evenly distributed.
- Scoop about 1 tablespoon of dough for each cookie, roll into balls, and place on the prepared baking sheet, spaced about 2 inches apart. Bake for 8-10 minutes until edges are set and tops look slightly cracked. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
- For the filling, beat the softened butter until smooth. Gradually add powdered sugar, then mix in heavy cream, vanilla extract, and a pinch of salt until fluffy and spreadable.
- Once the cookies are cool, match them into pairs. Spread filling on the flat side of one cookie and press another cookie on top.
- Let the assembled sandwiches sit for about 10 minutes to allow the filling to firm up before serving.
Notes
Store in an airtight container at room temperature for up to a week. You can freeze the sandwiches for up to three months.
