- 4 cups fresh peaches, sliced
- 1 cup raspberries
- 1 cup sugar
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/2 cup butter, melted
- Vanilla ice cream for serving
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the sliced peaches, raspberries, sugar, cinnamon, and lemon juice. Spread the fruit mixture in a greased baking dish.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add the milk and melted butter, stirring until just combined.
- Pour the batter over the fruit mixture in the baking dish.
- Bake for 40-45 minutes, or until the top is golden brown and the fruit filling is bubbly.
- Serve warm with a scoop of vanilla ice cream.
Notes
For a crunch, sprinkle 1/2 cup of chopped nuts or oats over the batter before baking. Make it gluten-free by replacing the flour with a 1:1 gluten-free flour blend.
