  • Total Time: 60 minutes
  • Yield: 8 servings 1x

Ingredients

Scale
  • 4 cups fresh peaches, sliced
  • 1 cup raspberries
  • 1 cup sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup butter, melted
  • Vanilla ice cream for serving

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the sliced peaches, raspberries, sugar, cinnamon, and lemon juice. Spread the fruit mixture in a greased baking dish.
  3. In another bowl, whisk together the flour, baking powder, and salt. Gradually add the milk and melted butter, stirring until just combined.
  4. Pour the batter over the fruit mixture in the baking dish.
  5. Bake for 40-45 minutes, or until the top is golden brown and the fruit filling is bubbly.
  6. Serve warm with a scoop of vanilla ice cream.

Notes

For a crunch, sprinkle 1/2 cup of chopped nuts or oats over the batter before baking. Make it gluten-free by replacing the flour with a 1:1 gluten-free flour blend.
