Instructions
- Preheat the oven to 350°F and line a large cookie sheet with parchment paper.
- Whisk the eggs in a mixing bowl until well-beaten.
- Add peanut butter and maple syrup, stirring until well-combined.
- Mix in the oats, cinnamon, baking soda, and sea salt until a thick dough forms.
- Fold in chocolate chips until well-distributed.
- Drop mounds of dough onto the prepared baking sheet.
- Bake for 9-12 minutes, or until set, ideally 10 minutes.
- Allow cookies to cool for 10 minutes before serving.
Notes
Add nuts or dried fruit for texture. Use crunchy peanut butter for added crunch.
