- 2 slices of bread
- 1 cup shredded cheese (mozzarella, cheddar, or your choice)
- 2 tablespoons pesto
- Butter or olive oil for grilling
Instructions
- Spread pesto on one side of each slice of bread.
- Place the shredded cheese between the slices of bread, pesto side inwards.
- Heat a skillet over medium heat and add butter or olive oil.
- Place the sandwich in the skillet, cooking until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
- Remove from heat, slice, and serve warm.
Notes
For variation, mix different cheeses and add veggies like tomatoes or spinach. Serve with fresh fruit or a simple salad.
