Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced onion and bell pepper, sautéing until softened.
- Add the minced garlic and cook until fragrant.
- Add the chicken pieces, seasoning with salt and pepper, and cook until browned and cooked through.
- Stir in the pineapple chunks and soy sauce, cooking for an additional 2-3 minutes.
- Add the cooked rice, mixing everything together until heated through.
- Serve warm, garnished with green onions if desired.
Notes
Leftovers can be stored in an airtight container in the fridge for up to three days. Reheat in the microwave or stovetop.
