Ingredients

  • 1 block (8 oz) feta cheese, drained (approx. 220 grams)
  • 1/4 cup plain Greek yogurt
  • 1 cup canned pumpkin puree (unsweetened)
  • 12 tbsp honey (plus more, to serve)
  • 1 tsp dried thyme (or 2 tsp fresh thyme)
  • Freshly cracked black pepper
  • Chopped walnuts (optional; raw or toasted)
  • Extra honey drizzle
  • Crusty, toasted bread (like sourdough or baguette)
  • Crackers

Instructions

  1. In a food processor, blend the feta cheese and Greek yogurt until smooth, scraping down the sides as needed.
  2. Add pumpkin puree, honey, thyme, and black pepper, and blend until well mixed.
  3. Transfer the mixture to the fridge and chill covered for 30-60 minutes.
  4. Once ready to serve, place the chilled dip in a large bowl and garnish with walnuts, fresh thyme, extra honey, and more black pepper.
  5. Serve with crusty bread and crackers for dipping.

Notes

For a smoother texture, blend longer and scrape down the sides. Adjust the sweetness of the dip by varying the honey amount. Experiment with different herbs for unique flavors.
