- 1 block (8 oz) feta cheese, drained (approx. 220 grams)
- 1/4 cup plain Greek yogurt
- 1 cup canned pumpkin puree (unsweetened)
- 1–2 tbsp honey (plus more, to serve)
- 1 tsp dried thyme (or 2 tsp fresh thyme)
- Freshly cracked black pepper
- Chopped walnuts (optional; raw or toasted)
- Extra honey drizzle
- Crusty, toasted bread (like sourdough or baguette)

Instructions
- In a food processor, blend the feta cheese and Greek yogurt until smooth, scraping down the sides as needed.
- Add pumpkin puree, honey, thyme, and black pepper, and blend until well mixed.
- Transfer the mixture to the fridge and chill covered for 30-60 minutes.
- Once ready to serve, place the chilled dip in a large bowl and garnish with walnuts, fresh thyme, extra honey, and more black pepper.
- Serve with crusty bread and crackers for dipping.
Notes
For a smoother texture, blend longer and scrape down the sides. Adjust the sweetness of the dip by varying the honey amount. Experiment with different herbs for unique flavors.
