This blueberry French toast casserole is the perfect make-ahead breakfast. Creamy, custardy, and filled with juicy blueberries, it’s a weekend brunch favorite that’s easy to prepare and even easier to devour.

Ingredients

6 cups cubed brioche or white bread

2 cups fresh or frozen blueberries

6 large eggs

1 cup milk

1 cup heavy cream

1/2 cup granulated sugar

1/4 cup brown sugar

1 tsp cinnamon

2 tsp vanilla extract

1 tbsp butter for greasing

Instructions

1. Grease a 9×13-inch baking dish with butter.

2. Add half the bread cubes to the dish, followed by half the blueberries.

3. Layer the remaining bread and blueberries.

4. In a large bowl, whisk eggs, milk, cream, sugars, cinnamon, and vanilla.

5. Pour the custard mixture evenly over the bread layers.

6. Cover and refrigerate overnight or for at least 30 minutes.

7. Preheat oven to 350°F.

8. Bake uncovered for 40–45 minutes until golden and set.

9. Let rest for 10 minutes before serving.

10. Top with powdered sugar, syrup, or whipped cream.

Notes

To avoid over-browning, tent with foil halfway through baking.

Use stale bread for best texture absorption.

Frozen blueberries don’t need to be thawed before baking.
