Ingredients

  • 2 boneless chicken breasts
  • 2 tablespoons olive oil
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with salt, pepper, oregano, and thyme.
  3. Add chicken to the skillet and cook for about 6-7 minutes per side, or until cooked through.
  4. Remove chicken from the skillet and let rest.
  5. In the same skillet, add garlic, broccoli, red bell pepper, and zucchini. Cook for 5-7 minutes, until vegetables are tender.
  6. Slice the chicken and add it back to the skillet.
  7. Stir to combine and serve immediately.

Notes

Pound the chicken to even thickness for even cooking. Let it rest for 5 minutes before slicing.
