Ingredients

- 4 cups rhubarb, chopped
- 1 cup sugar
- 1 teaspoon cinnamon
- 1/4 cup lemon juice
- 1 packet pectin
Instructions
- In a large pot, combine chopped rhubarb, sugar, cinnamon, and lemon juice.
- Bring the mixture to a boil over medium heat, stirring frequently.
- Once boiling, add the pectin and continue to boil for 1-2 minutes until the mixture thickens.
- Remove from heat and pour into sterilized jars.
- Seal the jars and let cool before refrigerating.
Notes
For added sweetness, you can increase the sugar. Consider adding vanilla extract or other fruits for a flavor twist.
