Ingredients

Scale
  • 8 slices sandwich bread (crusts optional, flattened with a rolling pin)
  • 8 breakfast sausage links (cooked)
  • 2 large eggs
  • 1/4 cup milk
  • 1 tablespoon granulated sugar (optional)
  • 1/2 teaspoon ground cinnamon (optional)
  • 1 tablespoon butter or cooking oil, for frying
  • Maple syrup, for serving

Instructions

  1. Cook the breakfast sausage links according to package directions until browned and cooked through. Set aside.
  2. In a shallow dish, whisk together the eggs, milk, optional sugar, and optional cinnamon until well combined.
  3. Take each slice of flattened bread and place a cooked sausage link at one end. Roll the bread tightly around the sausage.
  4. Dip each sausage roll-up into the egg mixture, ensuring all sides are coated.
  5. Heat butter or oil in a large non-stick skillet over medium heat.
  6. Place the roll-ups in the hot skillet, seam-side down first, and cook for 2-3 minutes per side, or until golden brown and cooked through.
  7. Serve warm with maple syrup for dipping.

Notes

Store leftover roll-ups in an airtight container in the refrigerator for up to 3 days.
