Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine the grated zucchini, flour, baking soda, baking powder, salt, pepper, and garlic powder.
- In another bowl, whisk together the eggs and oil.
- Stir the wet ingredients into the dry ingredients until just combined.
- Fold in the Parmesan cheese and herbs.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Let it cool for a few minutes before removing from the pan and slicing.
Notes
For extra flavor, add cheddar cheese or cooked bacon. This bread can also be made gluten-free with a suitable flour substitute.
