Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the grated zucchini, flour, baking soda, baking powder, salt, pepper, and garlic powder.
  3. In another bowl, whisk together the eggs and oil.
  4. Stir the wet ingredients into the dry ingredients until just combined.
  5. Fold in the Parmesan cheese and herbs.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  8. Let it cool for a few minutes before removing from the pan and slicing.

Notes
