Ingredients
2 pounds beef stew meat (cubed chuck roast works well)
4 tablespoons unsalted butter
6 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon paprika
Salt and pepper, to taste
Fresh parsley, for garnish (optional)
1 tablespoon cornstarch + 2 tablespoons water (optional, for thickening sauce)
Instructions
1. Season beef with garlic powder, onion powder, paprika, salt, and pepper.
2. Place beef into the slow cooker. Sprinkle minced garlic on top.
3. Add sliced butter pieces and pour in Worcestershire sauce.
4. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until beef is fork-tender.
5. (Optional) Mix cornstarch and water to make a slurry, then stir into the slow cooker during the last 30 minutes of cooking to thicken sauce.
6. Stir well before serving. Garnish with fresh parsley if desired.
Notes
For a bolder flavor, sear the beef in a skillet before adding it to the slow cooker.
Store leftovers in the fridge up to 4 days; reheat gently.
Great served over mashed potatoes, rice, or cauliflower mash.
