Ingredients
1 lb ground beef
8 flour tortillas (soft taco size)
1 cup shredded cheddar or American cheese
1/4 cup diced pickles
1/4 cup finely diced onions
Burger sauce (mayo, ketchup, mustard, pickle juice)
Salt and pepper to taste
Instructions
1. Mix burger sauce in a bowl and set aside.
2. Divide ground beef into 2 oz balls.
3. Preheat skillet over medium-high heat.
4. Place tortilla in pan, smash beef ball on top, season.
5. Flip tortilla once beef is browned and crusty.
6. Top with cheese and second tortilla, cook until golden.
7. Flip and cook second side until crispy.
8. Remove, slice into wedges, and serve with sauce.
Notes
Don’t overstuff; thin beef patties crisp best.
Use cast iron for that classic smashburger sear.
