  • 6 large flour tortillas
  • 1 pound breakfast sausage
  • 6 large eggs
  • 1 cup shredded cheese (cheddar or a Mexican blend)
  • 1 cup milk
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the breakfast sausage over medium heat until browned. Remove from the pan and set aside.
  3. In the same skillet, whisk together milk, flour, garlic powder, onion powder, salt, and pepper. Cook until thickened, about 3-5 minutes.
  4. In a bowl, whisk the eggs and scramble them in the skillet until cooked.
  5. In each flour tortilla, layer the cooked sausage, scrambled eggs, and cheese. Roll them up and place them in a baking dish.
  6. Pour the creamy gravy over the enchiladas and bake for 20-25 minutes, or until heated through and bubbling.
  7. Garnish with chopped green onions before serving.
