Ingredients

  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 4 large tortillas
  • 2 tablespoons olive oil

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  2. Add the fresh spinach and sauté until wilted, about 2-3 minutes.
  3. Remove from heat and let cool slightly, then mix in the feta cheese.
  4. Place a tortilla in the skillet, and spread a portion of the spinach and feta mixture on one half of the tortilla.
  5. Fold the tortilla over and cook until golden brown, about 2-3 minutes per side.
  6. Repeat with the remaining tortillas and filling.
  7. Cut into wedges and serve warm.
