- 2 cups fresh spinach
- 1 cup feta cheese, crumbled
- 4 large tortillas
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Add the fresh spinach and sauté until wilted, about 2-3 minutes.
- Remove from heat and let cool slightly, then mix in the feta cheese.
- Place a tortilla in the skillet, and spread a portion of the spinach and feta mixture on one half of the tortilla.
- Fold the tortilla over and cook until golden brown, about 2-3 minutes per side.
- Repeat with the remaining tortillas and filling.
- Cut into wedges and serve warm.
Notes
Serve with a side salad, salsa, or sour cream. You can customize with toppings like avocado or jalapeños.
