Ingredients
1.5 lbs chicken thighs or breasts, boneless and skinless
4 cups fresh spinach
8 oz mushrooms (cremini or portabella), sliced
3 cloves garlic, minced
1/2 cup heavy cream or Greek yogurt
1/2 cup grated Parmesan cheese
Salt, pepper, Italian seasoning to taste
Olive oil for searing
Instructions
1. Preheat oven to 400°F (204°C).
2. Heat oil in skillet and sear chicken until browned.
3. Remove chicken. In the same pan, sauté mushrooms and garlic.
4. Add spinach and cook until wilted.
5. Mix cream, Parmesan, and seasoning in a bowl.
6. In a baking dish, layer chicken, spinach-mushroom mixture, and pour sauce over.
7. Top with extra cheese and bake 20–25 minutes.
8. Serve warm.
Notes
Use Greek yogurt for a lighter option.
Swap cream for dairy-free alternatives if needed.
Store leftovers in the fridge up to 4 days.
