- 1 bag frozen chopped spinach (10 oz), thawed and drained
- 1 block cream cheese (8 oz), softened
- 1/2 cup grated Parmesan
- 1/4 cup mayonnaise
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- Pinch of red pepper flakes (optional)
- 1 sheet puff pastry, thawed but cold
- 1 egg, for brushing
Instructions
- In a bowl, mix together cream cheese, Parmesan, mayonnaise, garlic powder, onion powder, and black pepper.
- Drain the spinach thoroughly and add it to the mixture, blending until uniform.
- On a floured surface, roll out the puff pastry and spread the spinach mixture evenly, leaving one edge empty.
- Roll the pastry tightly from the filled side to the empty edge and wrap it in plastic, refrigerating for 30 minutes.
- Preheat the oven to 400°F (200°C).
- Slice the chilled roll into half-inch rounds and place them on a parchment-lined baking sheet.
- Beat the egg with a splash of water and brush it on top of each pinwheel.
- Bake for 15 to 20 minutes until golden brown and puffed.
Notes
Serve warm with marinara sauce or veggies and hummus as a dip. Great for gatherings and can be made ahead of time.
