  • 2 cups Fresh Spinach (sautéed to enhance flavor)
  • 4 cloves Garlic (minced)
  • 1 small Onion (optional, finely chopped)
  • 1 large Egg
  • 1 cup Breadcrumbs (can use oats or almond flour)
  • 1/2 cup Grated Parmesan Cheese
  • 8 oz Low-Moisture Mozzarella Cubes (use chilled to avoid leaks)
  • 1 tbsp Italian Seasoning
  • Salt (to taste)
  • Pepper (to taste)
  • 1/2 tsp Red Pepper Flakes (for heat)
  • 1 tbsp Chopped Parsley (for freshness)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, sauté the fresh spinach over medium heat until wilted. Set aside to cool.
  3. In a large mixing bowl, combine the ground beef or turkey, sautéed spinach, minced garlic, optional onion, egg, breadcrumbs, Parmesan cheese, Italian seasoning, salt, pepper, and red pepper flakes.
  4. Mix everything until well combined.
  5. Take small portions of the mixture and form them into meatballs, placing a cube of mozzarella in the center before sealing.
  6. Arrange the meatballs on a baking sheet lined with parchment paper.
  7. Bake for 25-30 minutes until cooked through and golden brown.
  8. Garnish with chopped parsley.
