- 2 cups Fresh Spinach (sautéed to enhance flavor)
- 4 cloves Garlic (minced)
- 1 small Onion (optional, finely chopped)
- 1 large Egg
- 1 cup Breadcrumbs (can use oats or almond flour)
- 1/2 cup Grated Parmesan Cheese
- 8 oz Low-Moisture Mozzarella Cubes (use chilled to avoid leaks)
- 1 tbsp Italian Seasoning
- Salt (to taste)
- Pepper (to taste)
- 1/2 tsp Red Pepper Flakes (for heat)
- 1 tbsp Chopped Parsley (for freshness)
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet, sauté the fresh spinach over medium heat until wilted. Set aside to cool.
- In a large mixing bowl, combine the ground beef or turkey, sautéed spinach, minced garlic, optional onion, egg, breadcrumbs, Parmesan cheese, Italian seasoning, salt, pepper, and red pepper flakes.
- Mix everything until well combined.
- Take small portions of the mixture and form them into meatballs, placing a cube of mozzarella in the center before sealing.
- Arrange the meatballs on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes until cooked through and golden brown.
- Garnish with chopped parsley.
