- ½ cup fresh strawberries, chopped small (80g)
- ½ cup unsalted butter, melted (113g)
- 1 cup granulated sugar (200g)
- ¼ teaspoon kosher salt
- 1 large egg, room temperature
- 1 teaspoon pure vanilla extract
- 1 ¼ cup all-purpose flour (157g)
Instructions
- Preheat oven to 350°F and line an 8×8 baking pan with parchment paper.
- Prepare the strawberries by washing, slicing off the tops, and chopping into small pieces. Spread them out on paper towels to absorb excess moisture.
- In a medium bowl, whisk together melted butter, sugar, and kosher salt until well combined.
- Add the egg and vanilla extract, and whisk for about 1 minute until mixed.
- Fold in the all-purpose flour until large streaks remain, then gently mix in the chopped strawberries.
- Drop the batter into the prepared baking pan and smooth it into an even layer.
- Bake for 25-30 minutes until the edges are lightly browned and a tester comes out with a few moist crumbs. Allow to cool in the pan on a wire rack before cutting.
Notes
Serve warm or at room temperature. Can pair with ice cream or whipped cream for a special treat. Store in an airtight container for up to 3 days at room temperature or a week in the refrigerator.
