Ingredients

  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup crushed strawberries (fresh or frozen)
  • 1 cup graham cracker crumbs
  • 1 teaspoon vanilla extract
  • 1/2 cup white chocolate chips (for coating)
  • Sprinkles or extra crushed strawberries for garnish (optional)

Instructions

  1. In a large bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
  2. Fold in the crushed strawberries and vanilla extract until well combined.
  3. Gradually add the graham cracker crumbs to the mixture until you can form a dough-like consistency.
  4. Roll the mixture into small balls (about 1 inch in size).
  5. Place the balls on a baking sheet lined with parchment paper and refrigerate for 30 minutes to set.
  6. Melt the white chocolate chips in the microwave or over a double boiler.
  7. Dip each truffle ball into the melted chocolate, allowing excess to drip off.
  8. Place coated truffles back on the parchment and garnish as desired.
  9. Refrigerate again until set, about 15 minutes.
  10. Serve chilled and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to a week. These truffles can also be frozen and thawed before serving.
