- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup ranch dressing
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup diced tomatoes
- 1 cup diced bell peppers
- Tortilla chips or mini taco shells for serving
- Chopped green onions for garnish
Instructions
- In a skillet, brown the ground beef over medium heat. Drain excess fat.
- Stir in the taco seasoning and follow packet instructions. Let cool slightly.
- In a bowl, mix ranch dressing, shredded cheese, diced tomatoes, and bell peppers.
- To serve, place a spoonful of the beef mixture on a tortilla chip or mini taco shell, top with the ranch mixture, and garnish with green onions.
Notes
Drain the beef well to prevent sogginess, and let it cool before mixing with ranch dressing to keep the cheese from melting too fast.
